Tuscan Pasta with No-cook sauce

Ingredients

1 tbsp olive oil

70g slow-roasted tomatoes chopped

80g black olives roughly chopped

1 red onion thinly sliced 

200g New Way Vegan Chorizo crumbled

3-4 crowns of fresh basil roughly chopped

200g of Penne cooked, keep the pasta water

Method

Cook your pasta as it says in the packaging, and keep the pasta water.

Add the olives, tomatoes, New Way Vegan chorizo, basil, and olive oil in a large mixing bowl.

Mix it well.

Add a few tablespoons of hot pasta water. ( best to take it straight from the pot)

And mix it into a paste, then add your pasta and fold it into the paste

Add more pasta water if needed.

Add salt and fresh cracked pepper to taste.

Serve it immediately, chill it, and enjoy it hot or cold as a pasta salad.
